Ingredients:
- 2 beetroot, peeled and chopped
- 1 onion, chopped
- 2 tablespoons ÍON Oil Veggie Allrounder Organic Mix
- 1 tablespoon ÍON Walnut Oil
- 2 cups of water
- Salt and pepper to taste
- Cooked wholemeal spaghetti (500g)
- 1 cup cooked peas
- Pieces of feta cheese
- Baby spinach leaves
- Chopped toasted walnuts
Instructions
Sauté the Onion
Heat ÍON Walnut Oil in a pan over medium heat and cook the chopped onion for 5 minutes until softened.
Add the Beetroot & Spices
Stir in the chopped beetroot and ÍON Oil Veggie Allrounder Organic Mix, coating everything evenly in the spices.
Simmer Until Tender
Pour in water, bring to a simmer, then reduce heat and cook for 30 minutes until the beetroot is soft.
Blend the Sauce
Let the mixture cool slightly, then blend until smooth and creamy. Add more water if needed for consistency.
Season to Taste
Stir in salt and pepper to enhance the flavours.
