Toss the sweet potatoes, peppers, and onion with 1 tablespoon of ÍON Asian Spice Mix and 1 tablespoon of sunflower oil. Add to the air fryer and cook at 180°C for 8 minutes.
Season the chicken strips with 1 tablespoon of ÍON Asian Spice Mix and 1 tablespoon of sunflower oil. Coat them in a mixture of plain flour and cornflour. Place the chicken strips on top of the vegetables in the air fryer drawer and cook for another 8 minutes.
Open the air fryer, shake the basket, and toss everything together. Add the sliced scallion and red chilli for extra spice and flavour. Cook for a final 8 minutes.
